make editable fields appear non-editable?

While working with an existing jQuery Grid i was asked to make it so that given certain conditions only one field could be editted.

After mucking arround with it for a while i found that certain fields need to be edittable for it to send the data back to the database... most of these i have got set as Read-Only, but i've been asked to make them like the other fields, the unneccesary ones i made unedittable.

So, what i want to know is, can anyone help me figure out if there is a way to have fields in the grid which are Edittable but Read-Only, look instead like a field that is Unedittable?

i don't suppose there's a way to adjust the defaults for the way fields are displayed? any information, even if it doesn't strictly answer the question might set me on the right track as i'm still looking for an answer
