You can use sorttype property defined as function. Look at the demo for example from the anwer and from here. For additional information see here.

I would like to have some kind of "currency" sorter in my table, but the problem is how to extract money value from custom object (which is cell's value). I want to use a solution based on custom sort function, but I haven't found any examples of it.

It would be great to see some example or docs that describe what this function should implement.
